Turkey and Chorizo Stew recipe

Turkey and chorizo mix together in this hearty stew filled with some delicious flavours. Warming and very filling, you could serve this stew on its own, but it would also be delicious with some warm crusty bread.

  • 300g turkey breast
  • 150g chorizo sausage
  • 250g puy lentils
  • 250ml white wine
  • 250ml hot chicken stock
  • 1 celery stick
  • 1 onion
  • 1 carrot
  • 1 red pepper
  • 2 garlic cloves
  • 1 tsp. olive oil
  • Salt and pepper

  1. Finely chop all of the vegetables and mince the garlic cloves. Finely slice the chorizo, and chop the turkey.

  2. Heat the oil in a pan and add the chorizo until some of the oils release. Add the onion, celery and carrot and fry until the vegetables soften. Add the pepper and garlic, cook for another few minutes, then add the turkey and cook for five minutes more.

  3. Stir in the lentils, stock and wine, then season well with salt and pepper. Bring to the boil then reduce to a simmer and cook for half an hour or until the turkey and the lentils are tender.

This would be lovely with some cheese sprinkled over the top and a little bit of fresh chopped parsley stirred through before serving. This recipe serves four.
